The first time Nanaiya put on an apron was when he was 6 years old. At that time, in the countryside, he was not as tall as my stove and had to build a bench to put the pots and pans on. The first time was when I finished the first dish in my life with the help of my mother (but I completely forgot what dish it was). Prepare the raw materials in advance, clean the internal organs of the fish, and cut it into thin slices for later use

Cut the ginger into thin strips; cut the pickled pepper and dried chili into sections; mince the garlic; cut the old ginger into shreds; cut the green onion into flowers and set aside

Marinate the fish fillets with salt, cornstarch, cooking wine, and white pepper to taste for 20 minutes

Heat oil in a pot, add shredded ginger, garlic, dried chili peppers, and pickled peppers and stir-fry until fragrant, then add shredded ginger, season with oyster sauce and sugar

Then pour an appropriate amount of water (not too much) and bring to a boil

Wash the enoki mushrooms and put them into a pot of boiling water until cooked, take them out and put them on the bottom of the bowl

Remove the enoki mushrooms from the pot and continue to boil. Slide the marinated fish fillets into the pot and cook over high heat for 2-3 minutes
