  1. Prepare two eggs and a little pork stuffing in advance. For the pork stuffing, choose pork that is 30% fat and 70% lean, and then mince it.

  3. Take a bowl of warm water, pour it into the egg liquid, and stir it evenly with chopsticks again. The ratio of egg liquid to warm water is 1:1.5, and should not exceed 1:2 at most. This ratio will produce the most tender egg custard.

  4. Prepare a sieve for filtering. You can buy a sieve at the supermarket nearby. Strain the beaten egg liquid into the steaming plate. If you want to make the egg custard tender and smooth, you can filter the egg liquid twice to completely filter out the small air bubbles so that the steamed eggs will not have pores.

I use a steamer and there will be no water vapor flowing down, so there is no need to cover it with plastic wrap, just steam it directly. If you use a steamer to steam, you need to cover the steaming plate with a layer of plastic wrap, and after the water boils, turn to low heat and steam for about ten minutes.

  6. While steaming the eggs, fry the minced meat. Heat the oil pan, add the minced meat and stir-fry until fragrant. Then pour in the cooking wine, light soy sauce and dark soy sauce. The minced meat will be fried easily.
