Thaw the cod, cut off the fins with scissors and cut into pieces, wash and set aside.

Cut onion and ginger into pieces and set aside.

Cut the sugar garlic into cubes and set aside.

Heat oil, sauté green onions and ginger, add cooking wine, light soy sauce and oyster sauce.

Add sugar and garlic.

Add underwater cod salt, MSG, chicken essence, pepper and star anise.

Reduce the juice over high heat, add water and starch, sprinkle with coriander and serve.
