Cherry mousse puff tart
Overview
Tomorrow is my mother-in-law's birthday, let's make her a luxurious dessert. The first time I made a combination dessert, it took me a day, but fortunately it tasted very good. I like the ACA oven, the color is very even, and the color of the puffs is beautiful.

Make the cherry bavaro first: add the egg yolks in the cherry bavaro ingredients to the fine sugar and mix well. Heat the milk to boiling, slowly pour half of it into the egg yolks, and stir while pouring.

Pour the egg yolk milk into the milk pot and continue to cook over low heat, stirring while cooking.

Boil the egg yolk and milk until thick, turn off the heat and add the soaked gelatine slices.

Use a food processor to puree the cherry jam into a puree, then add it to the egg yolk paste.

Beat the light cream until half-full.

Mix the light cream and the cherry egg yolk custard from step 4 evenly.

Pour into mousse molds and refrigerate.

Next, make the biscuit base: add butter, flour, cocoa powder, and powdered sugar into crumbs with your hands, add egg whites, and knead into a dough. Roll the dough into a disc and score a circle with the bottom of a removable bottom cake mold.

Put the cake base into the mold, prick the dough with a fork and let it rest for half an hour. Bake in the middle rack of the oven at 180 degrees for 15 minutes.

Put milk, eggs, purple sweet potato, and softened cream cheese into a cooking cup and beat into a fine paste.

Add cornstarch and mix well.

Pour the mixed purple potato cheese batter onto the baked biscuit base.

Put it in the oven again with hot air at 160 degrees for about 30 minutes.

Finally, make the puffs: put the butter and milk into a milk pot and bring to a boil over low heat.

Turn to low heat and sift in cake flour.

Use a wooden spatula to stir evenly. After the temperature of the batter has cooled down, add the egg liquid in batches.

Stir until it forms an inverted triangle without dripping.

Put the batter into a piping bag and pipe onto a non-stick baking sheet.

The middle rack of the oven is 180 degrees for about 20 minutes.

Pour in the whipped cream from the bottom.

Assembly: Place the purple potato tower on the bottom layer and top with cherry bavaro.

Cherry Bavaro is surrounded by puffs, and the top is decorated with cream, cherries and puffs.

The puffs should be eaten fresh and the cream squeezed in to prevent the puffs from absorbing moisture and affecting their crispy texture.
