The taste in memory--Noodles with tomato sauce
Overview
When I was in high school, I often went to Yang Daxia’s noodle shop and ordered tomato sauce noodles. The so-called Yang Daxia was actually a disabled uncle who was missing his right arm. He and his wife opened such a noodle shop. In the small shop, there were always many people when eating. Yang Daxia’s main job was to help prepare the bowls and deliver the noodles to the customers. His wife was in charge of the cooking. She didn’t say much, but she cooperated very well. I like to eat their tomato sauce noodles, which are slightly sweet and sour with tomato sauce, which suits my taste. So I often stand where the proprietress is making noodles and watch her fry eggs, stir-fry sauce, stir-fry, and cook noodles... When it is cooked, add coriander, chives, and drizzle in fragrant aroma. Oil, and a fragrant bowl of noodles came out. Of course, for me now, the amount of chicken essence, thirteen spices and pepper she put in was a bit scary, but for me as a student at the time, it was an alluring delicacy. It has been many years since I was at home. When I went back, I would try all the delicacies I liked to eat one by one. However, I don’t know where Yang Daxia’s shop has gone because of demolition. Fortunately, I learned from my teacher at that time, and I can now make my favorite delicacies at home. On a whim on Sunday, I rolled out the noodles myself. If it's too troublesome, all kinds of noodles on the market will do.
