Preserved egg and lean meat porridge is one of my favorite breakfasts, but everyone's method is different. Rinse 180 grams of rice twice, pour it into a bowl, add 200 grams of water, add a little sesame oil and soak for about 20 minutes (this will make the porridge very fragrant without burning the bottom of the pot after soaking);

Pour 1800 grams of water into the pot and put in a few slices of ginger and bring to a boil (this ginger slices water can enhance the flavor and kill the smell of meat);

While the water is boiling, cut the meat into small dices, add a little salt, pepper, and a few drops of lemon juice to marinate for a while (the restaurant master said: no cooking wine is needed, if you insist on adding cooking wine, I can't help it);

Boiling ginger water, add soaked rice and oil water, bring to a boil, then turn to medium to low heat and simmer slowly;

While the porridge is being cooked, pour an appropriate amount of water into a small pot and bring it to a boil. Add the shredded pork and blanch it to remove the fishy smell. Take it out and set aside;

Cut the preserved eggs into small pieces. Chop the slightly fragrant green onions and coriander and set aside (choose green onions instead of green onions, otherwise don’t use them to avoid the onion flavor!);

When the rice porridge is cooked and becomes slightly sticky, add the blanched shredded pork and preserved egg pieces and cook for a few more minutes;

Add a little salt and pepper (it tastes great without adding chicken essence);

Add chopped green onion and coriander;
