First of all, we need to destroy the fiber of celery, that is, to make celery not chewy when eaten; ① First blanch the celery, then quickly remove it and soak it in cold water, and use the method of thermal expansion and contraction to destroy the fiber. ② Cut the pork into thin strips and marinate with refined salt, cooking wine or soy sauce to remove the fishy smell and enhance the freshness. ③When frying, the meat strips should be loose and loose. Put the celery stems first, stir-fry and then add refined salt. Turn off the heat, add the celery leaves, stir-fry quickly and evenly, and then take it out of the pot.

Cut the pork tenderloin into strips and sprinkle with appropriate amount of salt.
