Hunan minced pepper fish head
Overview
Fish head with chopped pepper belongs to Hunan cuisine and is a famous dish in Hunan. The saltiness and spiciness of chopped chili peppers are infused into the fish head, giving it a unique flavor. The dishes are bright red in color, rich in flavor and tender in texture. Fat but not greasy, soft and waxy, fresh and spicy.

Baotou fish has a head, cut in half, and the lower jaw is connected. Clean well.

Prepare the marinade: cooking wine, light soy sauce, pepper, and a small amount of salt (some of the chopped peppers bought in the supermarket are very salty, so there is no need to add salt).

Put the fish head into the marinade and spread the marinade evenly over the entire fish head. Marinate for 30 minutes.

Take a plate and put ginger and green onion on the bottom.

Put the marinated fish head on top.

Spread a layer of chopped pepper evenly on the fish head.

After the water boils, put it in the pot, steam over high heat for 10 minutes, and simmer for 2 minutes.
