Chop the pig's trotters into pieces, add ginger, green onions and cooking wine to a pot under cold water, bring to a boil and remove the blood foam, wash and set aside

Add an appropriate amount of dark soy sauce for coloring, add pig trotters, salt, monosodium glutamate and thirteen spices for seasoning, simmer over medium heat for about an hour and then reduce the juice over high heat
