Chop off the nails from the chicken feet, wash them, put them in a pot of cold water and boil them, then take them out and wash them in warm water. While cooking chicken feet, prepare onions, ginger, garlic, chili peppers, garlic cloves, peppercorns, star anise, and bay leaves.

After the oil is hot in the pan, add all the seasonings except the salt, cooking wine and chicken powder. Saute until fragrant, add the chicken feet and stir-fry, then add the cooking wine. Add water to cover the chicken feet. Bring to a boil over high heat, then reduce to low heat and simmer for 25 minutes. Add salt chicken powder to taste. Turn to high heat and simmer for five minutes to reduce the juice.
