Spinach and Hainan Egg Drop Soup
Overview
My husband buys fresh Haihong after get off work. It’s rare that he can buy groceries home. I ate part of the steamed Haihong directly with the condiments, and I made egg drop and spinach soup with the rest. Because it uses steamed Haihong soup, the soup is extremely delicious. Hainan, also known as mussels, is more effective than the commonly used cholesterol-lowering drug sitosterol. It can be eaten by the general population, and is especially suitable for middle-aged and elderly people with weak constitution, insufficient Qi and blood, and people with malnutrition.

Wash the Haihong and steam it.

Remove the shells and remove the meat.

Wash and lightly blanch spinach.
