Debone the chicken thighs and cut them into bite-sized pieces; peel and chop the tomatoes; cut the cabbage into small pieces; mince the garlic cloves and onions;

Heat a little olive oil in a wok, stir-fry the chicken, add a little salt and pepper to taste, fry over medium heat for 2 to 3 minutes, until the surface is slightly colored, set aside;
