Mixed Noodles and Wild Vegetable Pancakes
Overview
The late spring and early summer in the north is a good season for eating wild vegetables. When I was a child, there were a lot of wild vegetables in my hometown. When spring and summer intersected, especially after the new rain, all kinds of wild vegetables rushed out of the ground. There were four-leaf vegetables, aphids, wormwood, bracken, Anhui vegetables... There were many others that I couldn't name, and they were collected by my brothers and sisters. Mother chopped up a small amount of pork belly and stir-fried it with light oil in a pot. After a while, she poured the fried oil together with the minced meat into the chopped wild vegetables, and mixed it with the scallions from her homeland. White flour is rarely used, but mostly yellow corn flour is used to make round vegetable balls. Once steamed in a big pot, the aroma fills the house even before it comes out of the pot. If there are not many wild vegetables, I will make some small pancakes. It is simple, easy to operate, and tastes great. Today I will bring you a wild vegetable pancake that is often made at home, using the common endive in my hometown.

I used endive which is unique to our north

Wash the wild vegetables, blanch them and let them cool

Chop the amount of wild vegetables you need. Don’t chop them too much. The bigger the grains, the better. (There are many wild vegetables, so they can be frozen and stored after blanching)

Chop green onions

Put the green onion into the wild vegetables, add salt, and break in an egg

Mix well

Add cornmeal and white flour

Mix well until the vegetable batter becomes a stagnant paste

Turn on the grill and heat it up, and apply a layer of oil on the baking sheet. Take a large spoon and put the vegetable batter on the baking sheet, spread it evenly with a spoon, cover the lid, and use pancake pan (same as pan or electric pan)
