Steps
-
Buy 2-3 fresh lamb ribs at a vegetable market or supermarket. Since they are baked in an oven, the mutton ribs you choose should not be too thick, otherwise they will not be easily cooked. Chop the lamb ribs into small pieces of about 5-7 cm, wash them, dry them and set aside.
-
Spread salt evenly on the lamb ribs and marinate for about fifteen minutes.
-
During the pickling process, shred the ginger and onion, and set aside the cumin.
-
Add the above ingredients to the lamb ribs.
-
Add an appropriate amount of black peppercorns, remember it is black peppercorns and not black pepper powder, the taste will be different.
-
Pour in appropriate amount of cooking wine to remove odor.
-
Mix well and marinate for about three hours.
-
After marinating for three hours, take an appropriate amount of honey. I used this big spoon to scoop out three spoons of honey.
-
Add appropriate amount of dark soy sauce.
-
Stir the honey and dark soy sauce evenly to make a sauce.
-
Add the sauce to the lamb ribs and stir evenly, making sure to leave a small portion of the sauce to use during the grilling process.
-
Put the lamb ribs into a plastic bag and refrigerate for 20-24 hours to allow the lamb ribs to fully absorb the flavor.
-
Heat the pot until it is 70% to 80% hot and pour in a small amount of salad oil.
-
Use chopsticks to skim off the shredded ginger and onion from the lamb ribs, spread the lamb chops evenly in the pan and fry until both sides are browned.
-
Spread a layer of tin foil on the baking sheet. The purpose of spreading the tin foil is to make the heat last longer and to make it easier to clean the baking sheet.
-
Before grilling, spread the remaining sauce evenly on the surface of the lamb ribs.
-
Adjust the oven temperature to 185 degrees and set the time for 25-30 minutes. Each oven brand is different, so you can control the temperature and time yourself. Lamb chops are difficult to cook, so the temperature should be slightly higher and the cooking time should be slightly longer.
-
When the time is up, take out the baking pan, turn all the lamb ribs over, then brush the last layer of sauce and continue baking. The temperature is still 185 degrees, and the time is 25-30 minutes.
-
Place the roasted lamb ribs on a plate and sprinkle with cooked white sesame seeds and some chives before serving.
