Wash the fresh squid, remove the black membrane and hard bones in the middle, and cut with a flower knife;

Wash the onions, ginger, garlic, green and red peppers, cut the onions into sections, shred the ginger, slice the garlic, and cut the green and red peppers into rings;

Put soy sauce, salt, sugar, balsamic vinegar, starch, and cooking wine in a bowl and mix into sauce and set aside;

Heat an appropriate amount of oil in a wok until the oil temperature is about 100 degrees. Add the squid and slide it until it curls. Pour the oil into a colander and set aside;
