Sweet and sour crisp
Overview
It’s also the season to eat bamboo shoots recently, and my relatives in the countryside grew orchid and bamboo shoots. I originally planned to make braised bamboo shoots, but I threw away a lot of them because they were very bitter. Finally, I happened to have a carrot in the refrigerator, so I made this summer appetizer. It’s sweet and sour, and I love it.

Fresh bamboo shoots will have an astringent and bitter taste and must be blanched. I blanched them three times before they had any bitter taste

When making sweet and sour sauce, I like it to be more sour, so I add more vinegar. I usually put cold vinegar and edible vinegar together, but I always feel that cold vinegar is not acidic enough

Let the prepared juice dissolve for a while, then pour it into the dish when you are ready to eat it. That way the dish will be very crispy
