Indian flying cake
Overview
We call it hand-waving pancake locally, it's called barada in Thailand, and it's called flying pancake in India. It uses centrifugal force to make the dough into a pancake, then puts eggs and various seasonings on it and fry it. Condensed milk is so delicious that it can be swallowed by the tongue. Of course, there are salty ones, but I still prefer sweet ones, such as banana, raisin, chocolate, etc. This recipe is the most suitable for small family handicraft workshops I have tried. It takes a short time, effortless, and can make it crispy and sweet.

Add condensed milk to water and mix thoroughly,

Slowly add the prepared juice into the flour, stirring while adding,

Add the whole egg liquid, slowly, while stirring,

Add the salad oil and knead until it becomes a smooth dough,

Use the dough hook of the electric egg beater and stir at low speed for about 3-4 minutes,

Cut the softened butter into small pieces, add it, and continue stirring for about 3 minutes,

Until it becomes a smooth dough, and it can basically reach the expansion stage when you pull it out. (In the expansion stage of making bread, gently pull it apart with your hands to form a thin film.) Cover it with gauze and let it rest for about 3 hours.

Divide the dough into equal portions (my pan is smaller, so I divide the dough into smaller portions)

Press the dough out first,

Lift the edge with your hands and draw an arc in the air. (You have to master the range of motion. I practiced it several times before I succeeded.)

Place it on the chopping board so that you can see the pattern on the table through the dough. Sprinkle with whole egg liquid, fold the sides to the middle, and fold it into a square. Put oil in the pan so that the oil just covers the bottom of the pan. Then flip it in and fry until both sides are golden and crispy. Drain the oil, cut into small pieces, and pour in an appropriate amount of condensed milk.

You can also put some dried cranberries, raisins, bananas, etc. My favorite is the banana flavor, with ripe bananas, it is especially delicious,
