Prepare a piece of tenderloin and cut into 1cm wide strips.

Add allspice, pepper, white wine, egg white, starch and cooking wine to the tenderloin, mix well with your hands, cover with plastic wrap and marinate for 1 hour.

Place the marinated tenderloin in the flour, covering all sides with flour.

Coat all tenderloin strips with flour and transfer to a clean plate.

Heat oil in a pot. When the oil is 70% hot, add the tenderloin strips and stir with chopsticks to prevent the strips from sticking together.

Wait until the tenderloin is fried until golden brown, take it out, wait until the oil in the pot is completely hot, add the fried tenderloin and fry again, take it out and serve it on a plate.

Finely chop the garlic.

Heat the oil in the pot, reduce the heat to low, and pour in the minced garlic. Be careful not to fry the minced garlic, otherwise the sweet and sour pork loin will have a bitter taste and the taste will completely change. If the minced garlic cannot be fried well, you can choose not to add garlic.

Add tomato paste, sugar and sesame seeds and bring to a simmer over low heat.

When the tomato sauce has big fish-eye bubbles, pour in the balsamic vinegar.
