  1. Wash and drain the pork ribs and set aside. Heat a little oil in a pressure cooker, add ginger slices and saute until fragrant.

  2. Add the pork ribs and fry until the surface is slightly browned.

  3. Pour in the cooking wine, a piece of red fermented bean curd (press it into puree), an appropriate amount of fermented bean curd juice, then add an appropriate amount of water, cover and press for about 10 minutes.

  4. After deflating, add an appropriate amount of soy sauce and salt (be sure to add less) and collect the juice.
