Prepare the ingredients, soak the mushrooms in salt water and flour for ten minutes and wash them with running water.

Wash the meat and cut it into pieces. Marinate it with salt, cooking wine, dark soy sauce and starch for ten minutes. Cut the mushrooms and fungus into small dices. Finely mince the ginger and garlic, separate the green onions and green onion leaves into finely chopped pieces.

Pour oil into the pot. When the oil is 70-80% hot, add the minced meat and stir-fry until it changes colour.
