Chop the mutton into pieces.

Pour cold water into the pot, add white radish, ginger slices and cooking wine and blanch for 5 minutes, remove and wash away any foam.

Prepare the spices, ginger, garlic, chili and rock sugar and place some of them inside the condiment ball.

Put oil in the pot, add the mutton, rock sugar, ginger, garlic, and chili, cook in cooking wine, light soy sauce, and dark soy sauce to add color and flavor, and stir-fry for a few minutes.

Place in a pressure cooker, add water and bring to a boil, cover with steam and turn to low heat for 25 minutes.

Cut the radish into hob cubes.

Add the mutton, season with salt and cook for 10 minutes until the radish is cooked.
