Braised Hairtail Fish
Overview
There are many ways to cook hairtail, whether braised in braised sauce, sweet and sour, pan-fried, or stewed, they all taste equally delicious. Everyone in our family prefers braised braised rice, a traditional home-cooked dish that is simple and delicious.

Wash the hairtail, remove the internal organs and cut into pieces, marinate with a small amount of salt, pepper and cooking wine for a while

Then use kitchen paper to wash off the surface moisture

Then pat on the dry starch (not too thick)

Slice ginger and garlic, dice chili pepper

Sauté ginger and garlic in a pan until fragrant

Fry the hairtail fish slowly over medium heat

Fry until the skin on both sides is slightly charred. Pour in light soy sauce, dark soy sauce and cooking wine until fragrant

Add a small amount of water, add chili, bring to a boil over high heat, and simmer over low heat for 6 or 7 minutes

Add a small amount of white sugar and turn to high heat to reduce the juice
