Overview
A must-eat dish for Shanghainese during the Chinese New Year, the freshly marinated smoked fish is crispy on the outside and tender on the inside. After a while, it has a different texture, soft and tasty. It is also great for cooking casseroles if it has been left overnight.

Prepare the ingredients.

Wash the herring and cut into pieces. Drain.

Fry slowly in a pan over medium-low heat.

Fry until the surface is golden brown and serve first.

Add the spices, green onion and ginger to the pot and stir-fry over low heat until fragrant.

Add appropriate amount of water, dark soy sauce, light soy sauce, rock sugar and bring to a boil, then simmer over low heat for a few minutes.

Strain out the spices.

Fry the fish pieces over high heat again.

Just soak it in the marinade for a few minutes.
