Boiled pork slices
Overview
Almost everyone loves to eat this dish. One bite of this spicy and fragrant meat slices will drive away the cold in the cold winter. You can cook this dish with some vegetables according to your personal preference. Today, I only have cabbage at home, so I paired it with some cabbage. This dish has to be poured with oil at the end to make it shiny and fragrant, but I don’t like to eat too greasy dishes, so I only pour a little oil on it, which seems a bit unauthentic, but the one that suits my taste is delicious.

Wash the pork loin and cut into appropriate-sized slices.

Put the cut meat slices into a bowl, add egg white, salt, starch, pepper and mix well, then add a little oil and mix well.

Heat the wok, add some chili peppers and Sichuan peppercorns to the cold oil and slowly stir-fry over low heat until lightly browned, then remove and let cool.

Chop the burnt chili peppers and Sichuan peppercorns and set aside.

Wash the cabbage and cut it into small pieces, cut the onion into sections, slice the ginger, and cut the red pepper into small rings and set aside.

Heat the oil used to fry the chili peppers again, add the cabbage and stir-fry until cooked.

Put the fried cabbage into a large bowl and set aside.

Heat another pot, add oil and stir-fry the green onions and ginger slices until fragrant, then add a spoonful of Pixian bean paste and stir-fry until fragrant.

Bring a large bowl of water to a boil.

Add appropriate amount of salt, sugar and chicken essence to adjust the taste.

Remove the onion and ginger slices.

Dip the meat slices into the soup one by one and cook.

Pour the cooked meat slices into the cabbage bowl.

Sprinkle with chopped Sichuan peppercorns, chili peppers and chopped red peppers, pour some hot oil, sprinkle with chopped green onion and serve.
