Noodle hairy crab
Overview
When I was a kid, there were always a lot of hairy crabs along the Qiantang River in the summer. After dark, you could catch a big bucket with a bucket and a flashlight. A few days ago, I made an appointment with my sister to go to the riverside to catch hairy crabs. After processing them at home, I made this dish, which is very reminiscent of childhood.

Prepare the ingredients (shred the ginger, cut the green onions into sections, remove the gills and feet of the hairy crabs and wash them)

Add a little salt, shredded ginger, some scallions, and a spoonful of cooking wine to the hairy crab (I used white wine instead when I ran out of cooking wine at home) and marinate for 10 minutes

Mix flour, a small amount of starch, salt, five-spice powder, fried chicken powder and water to make a paste. Drain the marinated hairy crab slightly and put it into the prepared paste.

Heat the oil in the pan and add the battered hairy crabs

Fry until golden brown, remove and control oil

Pour out the oil from the pan and add the fried hairy crabs

Mix a spoonful of starch, a little flour, a little salt, five-spice powder and water to make a thinner paste, and pour it into the pot

Collect the juice, then add the remaining scallions and serve.
