Mom’s private dish----Bear paw tofu and raw fried pork
Overview
This is my mother’s specialty dish. I love it so much that I secretly learned it. Bear paw tofu is actually tofu fried in a pan until both sides are golden. The tofu is crispy and delicious, absorbing the gravy and making it even more delicious. The raw fried pork has a rich sauce aroma. Mamma Mia, you are so talented.

Cut the pork belly into thin slices, leaving some of the fat aside. Slice the young ginger, slice the onion, cut the garlic sprouts into sections, smash the old ginger and garlic.

Cut the tofu into thicker slices, fry in oil until golden brown, remove and drain.

This is fried tofu.

Pour a small amount of oil into the pot, heat it up, pour in some fat and fry the fat, then remove the oil residue and discard it.

Add garlic, ginger, onion and peppercorns to the sauteing oil.

After sauteing until fragrant, add the pork belly slices and stir-fry until fragrant. Add some rice wine to remove the fishy smell and enhance the flavor, then add young ginger and garlic sprouts and stir-fry evenly.

Then add light soy sauce, sweet noodle sauce, black bean sauce, and sugar, stir together, then add the fried tofu and stir-fry together.

Finally, add MSG and pepper and stir well before serving.
