Dice the onion, dice the mushrooms, and chop the vegetables and tomatoes and set aside.

Beat two eggs.

Add the onions and shiitake mushrooms to the beaten egg mixture. Mix well.

Add flour again.

Mix until even and without lumps. Add a little water if it is thick. Add salt to taste until the consistency is as shown. Not too dry and not too watery.
