Remove the gills of the golden pomfret, clean the belly of the fish, drain the water after cleaning, and make a few cuts on the fish to absorb the flavor.

Wipe the fish with a kitchen towel and apply a layer of dry starch.

Heat the wok and add a little more vegetable oil. After it is hot, add the fish and fry both sides thoroughly and set aside.

Add minced ginger, minced garlic, peppercorns, and millet pepper to the base oil and sauté until fragrant.

Add water, appropriate amount of light soy sauce, dark soy sauce, sugar, mature vinegar, cooking wine, and salt, stir evenly, and bring to a boil over high heat.
