Overview
Braised pork rice is a kind of food. The raw materials include rice, pork belly, dried onions, starch, ginger, garlic, soy sauce, star anise, wine, rock sugar, allspice, pepper, etc. It is a common and classic snack in Taiwan. The specialty of braised pork rice is the meat sauce and gravy, which are key parts of its preparation. The preparation methods and characteristics of braised pork rice are different in Tainan, Taichung and Taipei. There are many kinds of food and snacks in Taiwan, but the most famous one is braised pork rice. It is said that only Taiwanese in China can make braised pork rice with a unique flavor. Wash the fresh pork belly, wipe dry, and then cut into small cubes with the skin on.

Put all the spices in the spice box one by one.

Put the diced pork belly into the pot and stir-fry slowly until it turns slightly color, forcing out excess fat.

Add soy sauce, rock sugar, salt, chicken essence, and MSG to the pot.

Pour the boiled marinade water into the pot for frying the meat.

Boil eggs in cold water

After it boils, pour the diced pork belly and the soup into the casserole and slowly braise it. After 2 hours, a pot of meaty braised gravy will be ready. When stewing, you can add a few boiled eggs with the skins peeled off, slowly stewing them together, and enjoy them with braised pork rice.

In order to prevent greasiness, it is best to prepare a plate of green vegetables to eat with it.

Serve rice, pour gravy over it, add braised eggs, and garnish with one or two green cabbage hearts or other refreshing side dishes.
