Overview
Yangzhou fried rice, also known as Yangzhou egg fried rice, is a classic snack in Yangzhou, Jiangsu. According to legend, it originated in the Sui Dynasty, and was developed by successive generations of chefs through gradual innovation and combining the characteristics of Huaiyang cuisine. Yangzhou fried rice in a broad sense has many varieties, including gold-coated silver rice, assorted egg fried rice, and green vegetable fried rice. Among them, assorted egg fried rice is the most typical variety. It has the tenderness of shrimps and the meaty flavor of ham. It is a good delicacy among staple foods.

Prepare the ingredients

Boil water, add green beans, carrots and corn kernels and blanch them for about 1 minute, remove and drain and set aside

Beat the eggs, chop the green onions, dice the ham, marinate the shrimps with 1 teaspoon of cooking wine and 1 teaspoon of starch for 10 minutes
