Braised Chicken Head
Overview
There are very few edible items in chicken heads, especially chicken brains, which contain high cholesterol, so people usually stay away from chicken heads, and some discard them as scraps. But if chicken heads are used as the main ingredient, cooking a delicacy on its own, and pairing it with a glass of wine, it is also a kind of fun.

Main and auxiliary ingredients: washed chicken head, onion and ginger.

Put the chicken head into the pot with cold water, bring it to a boil, drain it to remove the fishy smell, simmer over low heat for 1 minute and take it out. Rinse the chicken heads with flying water.

Heat oil in a pan, add green onions and ginger slices and saute until fragrant.

Add the chicken head, turn up the heat, and cook in the cooking wine.

Add appropriate amount of soy sauce. Fry until evenly colored.

Add water and bring to a boil, then add salt and sugar to taste. Simmer over low heat for about 10 minutes. Add MSG to enhance the freshness and increase the heat to reduce the juice.
