Spicy roasted pork knuckle

Pig's trotters are usually used to make soup and stew. This time I tried roasting them. Not too much fat, spicy and very tasty.

Prepare all the ingredients for braised pig trotters.

Cut the pig's trotters in half and soak them in cold water for more than two hours, changing the water halfway.

Put the onion, ginger, and pepper into the pot and bring to a boil, add the pig's trotters and blanch them.

Blanch the pig's trotters and rinse them with water.

Put a large bowl of old marinade into the pot, add green onions, ginger, star anise, cinnamon, and bay leaves. Grass fruit, dried chili pepper, tangerine peel, rock sugar.

Add salt, dark soy sauce and light soy sauce. Add enough water.

Boil the electric saucepan and simmer for about an hour and a half.

Next, make lotus leaf clips: This is the noodles that have been made. I made the noodles before going to bed the night before, and they were ready the next morning.

Take out the dough, deflate it, divide it into several small balls, and roll it into an oval shape. Brush the upper part with a thin layer of vegetable oil.

Take out the roasted pig's trotters, sprinkle bean flour and chopped peanuts on the surface. If you like coriander, you can sprinkle some chopped coriander.
