Special oil-splashed potato shreds

Potatoes are a healthy food and the starch they contain will not make you fat. It can be fried, stewed, steamed or pan-fried. It’s delicious no matter what. It’s a popular food lover. The dish I made today is not an original one. I went to a farmhouse some time ago and the landlady highly recommended her signature side dishes, saying that repeat customers must order it. When I brought it to the table, I saw that it was oil-splashed potato shreds. It's really delicious. Its texture is completely different from what you imagined. Shred as finely as possible. Rinse two or three times with clean water.

Put the water-controlled potato shreds into a clean container, which should be larger. Add flour and mix well. The shredded potatoes I have here are half the size of the freshly cut potatoes.

Control the amount of flour by yourself. The surface of each potato shred is evenly covered with flour and does not stick to each other. This state is fine.

Place a clean steaming cloth on the steamer. The steaming cloth should not be wetted with water and should be kept dry. Evenly spread the shredded potatoes mixed with flour.

Pour cold water into the pot, bring to a boil over high heat, turn to medium heat and steam for another 7 or 8 minutes.

While the potatoes are steaming, process the minced garlic and scallions. The more minced garlic tastes better.

Pour the steamed shredded potatoes into a clean container.

Heat oil in wok.

Add minced onion and garlic to the shredded potatoes, add chili powder, appropriate amount of salt, and chicken essence according to your personal preference for spiciness.

Heat the oil until it is 80% hot, turn off the heat, take a small spoon and pour the oil evenly on the top of the ingredients. It takes about two to three tablespoons of oil.
