Wash the middle part of the fish, cut it into pieces, add salt, cooking wine, green onions and ginger slices and marinate for half an hour.

Fry the fish pieces in batches in oil until golden brown.

Remove the oil control.

Pour the fried fish pieces into the sauce and soak them (I made less sauce, so it is best to cover the fish pieces).
