Dried radish stew
Overview
Dried radish stew is a special dish in our hometown. We often make it when the weather is hot, because we have a bad appetite in hot weather. The dried radish absorbs the oil of the pork belly very well and does not taste greasy at all. The longer you cook it, the better the aroma of the dried radish and meat will blend, and just smelling the aroma will whet your appetite. After the New Year, I ate too many greasy dishes, so my aunt gave her several kilograms of home-produced dried radish, and I started cooking it happily today.

Wash the pork belly

Place the pot under cold water and bring to a boil. After 1 minute, turn over and cook for another 1 minute

Take it out and clean the hair on the pig skin while it is hot

Cut into small cubes

Wash the dried radish with warm water and soak it in a basin of warm water for 20 minutes to see if it tastes salty

Cut into diagonal cubes and set aside

Heat oil in a pan

Pour in the pork belly and stir-fry

When the surface of the pork belly changes color, add cooking wine and stir-fry evenly

Add soy sauce, oyster sauce, star anise, dried chili pepper, pepper, lemon leaves and stir-fry evenly

.Slightly stir out some oil, then pour in 2.5 bowls of warm water, stir well, cover the pot and simmer for 10 minutes

Pour in the dried radish and mix well

Transfer all the ingredients to the casserole, cover the pot and bring to a boil over high heat, then turn to low heat and simmer for 1 hour, turning 1-2 times during this period

Test the saltiness after 1 hour, add appropriate amount of salt to taste and serve
