Flavored mackerel
Overview
Mackerel is a smaller type of Spanish mackerel. It has a strong fishy smell, so strong seasonings must be used when cooking it. This flavored mackerel dish uses a Korean-style chili sauce. It has a better color and is not very spicy. The spicy taste can neutralize the fishy smell, and the dish tastes good.

Clean up the fish. Score the knife close to the back of the fish.

Heat oil and sauté onion, ginger and garlic.

Add mackerel.

Turn up the heat, add cooking wine and vinegar.

Add Korean chili sauce

Add appropriate amount of water.

After boiling, add salt and sugar to taste, and cook over low heat for 5 minutes.

Flip and cook for another 3 minutes.

Turn off the heat when the juice is reduced.

Remove from pan, plate, and serve.
