Steps

Prepare a piece of winter melon
-
Peel the winter melon, cut it into four centimeters long and wide pieces, and carve a flower knife on the skin side to make the skin
-
Spread dark soy sauce on the cut winter melon, heat the pan, add a little oil, and heat it until it smokes slightly. Put the winter melon pieces, skin side down, in the pan and fry them over low heat. After frying to color, fry the other four sides (the side opposite to the skin does not need to be fried, so there are five sides in total) and fry them until they are slightly brown
-
Place the fried winter melon pieces, skin side down, in a bowl. Green onions, ginger, half anise (you can also use five-spice powder, thirteen spices) chopped
-
Pour the chopped ginger, green onion and star anise into the wok. There is no need to add any more oil. The oil used for frying the winter melon is enough. Once the fragrance comes out, add a little dark soy sauce (or sugar color), light soy sauce, oyster sauce, a little salt, and an appropriate amount of rice wine. You can also use other wine. I used the wine I brewed myself. It has a fruity aroma, and then add sugar, about a teaspoon. My wine is already sweeter with rock sugar. You can decide how much sugar to add. If you like it sweeter, add more. Remember, dongpo pork does not add water. After boiling, pour it into the bowl with the winter melon.
-
Then steam over high heat for ten minutes, then take it out, drain the soup, and put the winter melon on a plate. Pour the drained soup into the pot and bring to a boil, taste it, then adjust an appropriate amount of corn starch water to thicken it, pour it on top of the steamed Dongpo pork, and sprinkle with chopped green onion. This Dongpo pork dish is ready. ,
