Flavored Vegetable Rolls
Overview
I still wanted to make some low-calorie and refreshing recipes, so I came up with the content of this issue after referring to the family sharing of a software engineer. Don't laugh, I'm a software engineer, it doesn't matter. Cooking delicious food is something that everyone can happily participate in. right?

The main materials are ready.

Using a spiral grater, grate the carrots into fine shreds;

Cut the red pepper into shreds and set aside;

Wash and roughly chop coriander and mint, mince green onions and set aside;

Cut the tofu into slices, preferably rectangular;

Add a little salad oil to the frying pan and fry the tofu over medium-high heat for 2 to 3 minutes on each side until the tofu is golden brown. Season with salt and pepper;

Soak the Vietnamese spring roll wrappers in water for about 1 minute, gently shake off excess water and place on a cutting board. Arrange tofu, carrots, red peppers, sesame seeds, scallions and chopped herbs in a layer in the middle of the rice paper. Finally, top with peanut butter;

Fold the edge of the spring roll wrapper toward the middle using the method of rolling a pancake, push the bottom forward, and then use your thumbs to roll forward until the roll is tight.

Sprinkle sesame seeds on the vegetable rolls and serve with dipping sauce.
