Wash the black beans and soak them for about 2 hours. You can soak it the night before. Use a blender to make soy milk.

The bean dregs can be cooked thoroughly with water. After cooling, add flour and eggs, and spread them on the frying pan to form bean dregs pancakes. Because the time for making pancakes is relatively short, the bean dregs must be cooked in advance, which must be paid attention to.

There is a little bit of soy milk, you can add some water and cook it again. There is still a beany smell after boiling, so it needs to be cooked until it is completely cooked, about ten to twenty minutes after boiling. This is also critical and must be noted.

Divide the cooked soy milk in half, make one half to make egg tofu, and the other half to make some vinegar tofu. First pick up the top layer of tofu skin with chopsticks, you can pick 2 to 3 layers. After drying, it becomes black tofu stick.

How to make egg tofu: Beat an egg, beat it well, add the soy milk and stir. Cover the steamer with a lid to prevent dripping water from the steamer, then cover the pot with a lid and steam for about 10 minutes after the water boils.

How to order vinegar tofu: Prepare vinegar water first. 1 spoon of vinegar, 3 spoons of water, the ratio of vinegar to water is 1:3.

While the soy milk is still hot, add the vinegar water into the soy milk one by one. In about 1-2 minutes, water will begin to precipitate in the soy milk, and there will be precipitation. Just add vinegar water to the water in the soy milk and turn it into clear water. If the water in the soy milk still has color, you can add more.

Prepare a small basket, support it with a small cup, and place a small basin underneath. Spread a layer of gauze on the small basket, and spoon the vinegar-dried soy milk water into the middle of the gauze one by one. Spoon as far as possible into the middle to facilitate shaping later. Strain the water and leave the tofu on the gauze.

Wrap the gauze into a square shape. Press something heavy on the gauze bag for 1-2 hours. If it's summer, be careful to keep it in a cool place to prevent it from going bad, and don't press it for too long. Once pressed, store temporarily in the refrigerator and consume on the same day.

Make a dish with black tofu with some vinegar. Cut the tofu into cubes, dice the shallots, dice the garlic, and slice the ginger. Prepare the sauce, use light soy sauce, oyster sauce, bean paste, add some water and starch, stir into sauce.
