Sautéed Lamb with Fennel Balls
Overview
Winter is the season for eating mutton. Today we are going to eat mutton. I bought some fennel bulbs this morning and used them to fry the lamb. The mutton stir-fried with fennel bulbs is not muttony at all.

In order to make the fried lamb more tender, I specially chose lamb tenderloin. Clean fennel bulbs

Slice the mutton, add appropriate amount of pepper and rice wine. Mix the light soy sauce evenly and marinate for a few minutes

Add appropriate amount of dry starch

After stirring the dry starch evenly, add a small amount of oil and stir evenly, so that the pan will not be stirred when frying, and the meat slices will not stick to each other.

Add oil to the pot and sauté the minced ginger and chili until fragrant, add the meat slices and stir-fry over high heat

Add appropriate amount of light soy sauce and oyster sauce, stir-fry evenly

Add fennel slices and continue to stir-fry over high heat
