Grilled sea cucumber with green onions
Overview
Usually when sea cucumbers are made in hotels, they are cooked whole, or they are gathered around a large plate to symbolize reunion and celebration; or they are put into small plates and served one by one to the guests. No matter how it is arranged, it looks high-end, and of course the price is also high-end. Although the cost of making it at home is not low, whether it is a festival or a banquet, it is always more economical to eat, and you don't have to bake it whole. It is more delicious if you cut it into pieces and bake it. Don’t think it’s a luxury, we don’t eat it every day anyway——

Cut the sea cucumber into large pieces;

Cut the green onion into large pieces of about 5cm, and cut the ginger into shreds;

Pour sea cucumbers into a pot with cold water, bring to a boil over high heat, simmer for 5 minutes, drain and set aside;

Add lard in a small pot, when it is 50% or 60% hot, add green onion, fry slowly over low heat until golden brown, turn off the heat;

Remove the scallion segments and set aside, and reserve the scallion oil;

In another pot, add shredded ginger, salt, cooking wine, soy sauce and sugar, bring to a boil over high heat;

Add sea cucumber;

Add scallions;

Bring to a boil again, then turn to low heat and simmer for 2 or 3 minutes;

Turn to high heat, add water starch (about 1 tablespoon) in small amounts and many times to thicken the gravy, turn to medium heat and simmer until the juice is absorbed;

Pour in the scallion oil and turn off the heat.
