  1. Beef brisket, seasoned and cut into pieces. Because the beef will shrink, don't cut it too small. Put cold water in a pot, boil the water for one minute and then rinse it

  3. Also chop celery leaves and coriander and set aside.

  5. Pour all ingredients and seasonings into a casserole with stock and cook over high heat

  6. After the water boils, turn to the lowest simmer. Simmering mine usually takes three or four hours

  7. Half an hour before serving, add the chopped carrots and continue to simmer

  8. Turn off the heat, cover the pot and simmer for ten minutes. Let the aroma permeate the pot and garnish with coriander and celery leaves.
