Add 5g baking powder and 10g sugar to an appropriate amount of warm water (about 200g) and let it sit for 5 minutes. Pour in flour and knead into dough. Cover and let rise for 1 and a half hours.

Cut the green onions into small pieces, add them to the hot oil in a hot pan, stir-fry until fragrant, then turn off the heat and cool.

Finely chop the lean meat.

Add salt, cooking wine, black pepper, onion, ginger and garlic powder, scallion oil, oyster sauce and cornstarch to the lean meat and stir.

Add some cold boiled or filtered water and stir. Cover with plastic wrap and refrigerate.

Knead the dough smooth, roll it into long strips, and cut into balls.

Grease the steamer with oil and place the buns on top one by one, leaving a good gap.

Leave to ferment for 30 minutes, then steam. Boil water over high heat, steam over medium heat for 15 minutes, turn off heat and simmer for another 5 minutes. Take out of the pot
