The previous article mentioned that a grass carp is divided into three sections, and the head and tail are stewed in tofu soup. The remaining thick meaty middle section can be made in many ways - fish balls, fish fillets, braised in soy sauce... Let's try a more nutritious way to eat it this time. First fry the fish until it is cooked, then stir-fry diced vegetables, and use the juice of vegetables and seasonings to cover the fish. In this way, those who like vegetables can eat more vegetables, and those who like fish can eat more fish. Moreover, the flavor of the vegetable juice is permeated in the fish, which makes people appetite. Unfortunately, the photo was taken under night lights, and the light and color are not as beautiful as during the day. Clean grass carp

Divide it into three pieces, and stew the fish head and tail separately. Leave the fish body behind and pull out the white linear glands from both sides of the body. Chefs teach that this white gland is one of the main sources of fishy smell

Turn over and split in half from the middle spine, but don’t split through

Put it into a basin, pour cooking wine and salt, and marinate the fish body for 10 minutes

Pour away the water and wine used to marinate the fish, and sprinkle ordinary white flour on the fish

Evenly coat the surface of the fish with flour, lift it up and shake off the excess flour

Put oil in the oil pan in advance, light the fire, and heat it to 60%

Spread the fish body out and put it into the oil pan. You can use a spoon to scoop up the oil and pour it on the fish meat facing up
