Braised Pork Ribs with Mushrooms and Lotus Roots
Overview
I feel that lotus root and pork ribs are a perfect match, and with the addition of some mushrooms, this pot of soup is really delicious. Paired with some carrots and broccoli, it will be delicious.

Prepare the ribs. Rinse two or three times in clean water.

Prepare oyster mushrooms, enoki mushrooms, and seafood mushrooms.

Prepare carrots, lotus roots, and broccoli. Cut the carrots into hob cubes and cut the lotus root into thick slices.

Add cold water and pork ribs to the casserole and bring to a boil over high heat.

Boil the pot to remove the foam. The foam can be removed cleanly and the smell can be removed.

Simmer over high heat for 5 minutes and add lotus root cubes and carrots.

Turn to low heat and simmer for about 40 minutes until the lotus root pieces and pork ribs are cooked and soft.

Add other mushrooms and broccoli.

Boil again until the mushrooms are cooked. Add salt and pepper to taste.
