New Year’s Eve “Baicai Dumplings”
Overview
The New Year is approaching 2007 with a relaxed pace. Eating dumplings on the New Year has always been a custom. Today's Baicai Dumplings imply good luck, abundant wealth, and a strong flavor of the New Year. They symbolize the renewal of everything in the new year and good luck in getting rich.

Ingredients
Steps
-
Use spinach powder and knead two pieces of equally soft and hard dough respectively, and knead repeatedly until smooth. Set aside.
-
I bought spinach powder online. I have been making this kind of dumplings for many years using freshly squeezed juice and dough (I have made spinach-pressed noodles). Due to time constraints, I used spinach powder this time.
-
Roll the dough into strips.
-
Flatten the green side and just cover the white side.
-
Dip a little water and pinch to seal, then roll into a round shape and knead to desired thickness.
-
Get the dose.
-
Flatten the dope.
-
I forgot to take a picture of a small pot of dumpling filling, so there was only one bowl left.
-
Make Baicai dumplings.
-
You don’t need too much thin noodles to make dumplings.
-
The "Baicai" dumplings are ready.
-
Boil the water and cook the dumplings.
-
Cook until the dumplings float and swell, then take them out.
-
I turned off the heat and fished out the "Baicai Dumplings". I ate them without taking pictures during the family meal time. This time it was not as good as before (but unfortunately I didn't take any pictures before).
