Ingredients (for two people): 2 kidneys, 6 white mushrooms, 2 green peppers, half an onion, a little green onion and coriander, 2 packs of instant noodles (isn’t it really convenient!)

Seasonings: cooking wine, oyster sauce, soy sauce, white pepper, starch

The steps for processing kidney flowers (you can buy them prepared at the vegetable market) are very simple. Cut the flowers into pieces, put them in boiling and cold water and let them stand for 10 minutes. Then season them with cooking wine, oyster sauce, white pepper and starch.

Process the other ingredients, slice the white mushrooms, dice the green peppers and onions, cut the green onions and coriander into sections and it’s ready for the pot! After all the preparations are done, you can start cooking the instant noodles and put them in a large bowl (you can add the instant noodles seasoning packet if you like). While the noodles are cooking, you can fry the kidney toppings! When the oil in the wok is hot, add onions, green peppers and white mushrooms. Wait for the aroma to come out and then add the seasoned kidneys. After about 2 minutes, turn off the heat, add the green onions and coriander segments and stir.

The last step is to put it on the plate. Pour the kidney flower topping on the ready-to-eat noodles (you can add some cooked fresh cordyceps flowers for decoration)
