Tomato and Egg Braised Pork Noodles
Overview
My husband loves to eat pasta, so let’s make some tomato and egg noodles. I happened to braised eggs and braised pork at home yesterday. It’s a combination of meat, eggs, vegetables and noodles😜😏

After washing the tomatoes, blanch them in boiling water and peel them.

After the noodles are cooked to about 70% done, cool them in cold water. Don’t throw away the soup used to cook the noodles, as it will be used later.

Beat the eggs into egg liquid, add a small amount of cooking wine, add oil to the pot, stir-fry the eggs and set aside.

Peel the tomatoes and cut into cubes, and chop the green onions.

Put oil in the pot, when the oil is hot, add tomatoes and stir-fry, when the juice comes out, add sugar.

When the soup thickens, add half of the chopped green onions, stir-fry for a while, then add the noodle soup and bring to a boil.

After boiling, add noodles 🍜 and let the flavor penetrate into the noodles. Add salt, soy sauce, five-spice powder, and chicken essence, and simmer for a while.

Add the scrambled eggs, add a few drops of sesame oil, sprinkle with the remaining half of the chopped green onions and serve.
