Wash the chicken, cut into large pieces and put it into the pot, add water, ginger slices, a little cooking wine and boil for 2 minutes to remove the blood;

Heat oil in a pan, add green onions and ginger slices and saute until fragrant;

Peel and wash lotus root, cut into hob pieces, wash thumb carrot;

Add the blanched and washed chicken pieces, lotus roots, and carrots and stir-fry for a while, then directly add light soy sauce, dark soy sauce and other seasonings;

Add boiling water to cover 2/3 of the height of the chicken pieces, cover and simmer over low heat;
