Ingredients
- Aged vinegar (at least 5 years old) 2 spoons
- Apple cider vinegar 1 spoon
- Celery A small amount
- Chicken Essence A little
- Dried red chili pepper 5, 6
- Lean pork About two taels
- Light soy sauce 1 spoon
- Lotus root slices About half a catty
- Old soy sauce 1/2 spoon
- Peanuts Appropriate amount
- Soju 62°, 1 spoon
Steps
-
Crush the garlic and cut the dry red pepper in half; add white vinegar, mature vinegar, white sugar and a little water, make a sauce and set aside; wash the lean pork and cut into thin slices, mix well with light soy sauce, dark soy sauce, white pepper, 1 spoon of starch, and a spoon of soju, then marinate for about 10 minutes Right; Cut the other accessories into strips or cubes with a knife; wash the lotus root slices 2 or 3 times with cold water, then cut into small pieces with a knife, and boil in boiling water for 2 minutes. Take them out and soak them in cold water, drain off the excess water, and put them on a plate with other accessories in the order shown in the picture for later use;
-
After the pot is hot, add an appropriate amount of vegetable oil (I use non-GMO soybean oil), heat it to 60-70% heat, add dry red pepper, and stir-fry until it changes color
-
Add the marinated meat and stir-fry quickly (must stir-fry over high heat)
-
After the surface of the meat has basically changed color, add the prepared ingredients in the order listed on the plate, starting with the carrots
-
When the surface of the carrots changes color and the unique sweet aroma of carrots comes out of the pot, immediately add the lotus root slices
-
Add the seasoning sauce prepared in advance, add the remaining salt and thirteen spices, and continue to fry
-
The steam after adding the sauce will be very sour. When the sourness subsides slightly, add the remaining green peppers, celery, and peanuts
-
The surface of the green pepper changes color slightly, stir-fry the green pepper to bring out the fragrance, add garlic, add water starch prepared with apple cider vinegar and remaining starch, and chicken essence to thicken,
-
Take it out of the pot, put it on a plate, and start eating!
